Koppert Cress BV from Holland is probably the most innovative vegetable farm in the world. Rob Baan who has traveled the farming world for 25 years working for a seed company decided to settle down finally in his home country and blend some of the special flavors he found during his travels with Holland’s latest agricultural techniques. His main hobby being cooking and eating really good food helped him decide to aim his efforts towards the chefs. He calls the concept “architecture aromatique” and has developed a range of over 18 products, including edible flowers, with new flavors being presented periodically. Besides the great taste these microvegetables are also extremely healthy and even could be considered as a preventive medicine if used on a daily basis. Koppert Cress is a light on the horizon of the difficulties in finding good and healthy fresh products for chefs.
